Pioneer Woman’s best friend. Well, at least I like to think I am. Never met the gal, but her cookbook is my dearest companion these days. I always laugh at her jokes and I like to think we might be kindred spirits. Though I would never tell her that, cause then she would think I was a total weirdo. Which I’m not. But really I do think she is a hilarious writer and I adore her food. I’m doing my own Julie + Julia experiment with Pioneer Woman, however Ree + Emily doesn’t have the same ring to it. But I am working my way through her cookbook and loving every bite. Well, most every bite! I have only met one of her recipies that I didn’t like, while most of the others are making their way into my very special + sacred cookbook that includes only the recipies that I actually use on a regular rotation. My sister-in-law gave me this great cookbook…
You should get one. I love it because it’s a book and not a box of recipe cards, so I find that it is much more managable to keep up with and easy to puruse when you are trying to figure out what’s on the menu for the week. So I only allow the really good recipes make it in the book. I sometimes daydream about how one day when my children are grown and married, they will ask me to make copies of the cookbook or maybe they will argue over who gets to keep the copy of the book when I head to heaven and don’t need it anymore. We certainly won’t have piles of money to leave them, so what’s wrong with hoping this becomes a family heirloom of sorts! 🙂 Anyway, the book is a work in progress and Pioneer Woman’s recipes are filling the pages. Here are a few of my favorites that you should most definitely try:
Filet Au Poivre – DELISH!!!! Fancy, but really easy. Sure to impress!
Chicken Pot Pie – By far the best pot pie recipie I have come across…and I’ve been looking for a great one for years.
Butter Chicken – Easy and yummy Indian flare
That’s 3 great recipes (and a whole lot of butter and heavy cream, but oh well!) for you to try. Let me know what you think.

Skillet cornbread! I have made it probably a dozen times. It’s exactly how I like it, and am so happy to be able to have a go-to cornbread recipe. Mmmm.

She has a coffee lover’s cake. It is apparently amazing. I have made it several times for Jack- his favorite birthday or valentines gift. I am not a coffee drinker so I don’t eat it, but he loves coffee and he says it is like coffee on a fork. I first found the PW site after reading about it on your blog! The recipes sound great, although I haven’t tried any of them yet…just slow I guess! I was really surprised one day to read that Andrew & Kaitlin’s engagement photo had been accepted as part of their photo contest a few weeks ago. I told your Mom yesterday at church that I really enjoy keeping up with your family through your blog…
